MICHELIN PUB GUIDE ENTRY

Michelin Pub Guide entry(With apologies to Alfred Noyes)

The meat’s from the Forest of Bowland
among the gusty trees,
The fish it comes from Fleetwood
tossed upon cloudy seas,
The asparagus comes from Formby
over the purple moor,
The suppliers are on the menu –
Menu – menu-
and the customers they come riding,
up to the old inn door.

Having undergone a million pound refurbishment, and with owners passionate about local, traceable food, The Highwayman is certainly delivering the goods – from all over Lancashire, Cumbria and Yorkshire – and so serious are they here about sourcing their ingredients locally, they even have framed pictures of suppliers decorating the walls.

Friendly and efficient service from the smartly attired staff oils the wheels of the dining experience, and the spacious inn with its numerous open fires, banquette seating and pleasant stone terrace make an agreeable environment in which to enjoy flavoursome food.
